Little Bea's Favorite Banana Pumpkin Pupcake Bites

I love to cook (though I love to eat even more, lol), and today I thought I could share my recipe for one of my very favorite snackies, Banana Pumpkin Pupcake Bites! (You can also watch me making them here!) These miniature pupcake bites are super easy to make with just four ingredients. They are super soft and cakey, moist and naturally sweetened with little pieces of banana -- they are so good that I bet you'll have to share with the rest of your family as well!

Here's what you'll need:

• 2 ripe bananas, mashed
• 1 cup of canned pumpkin
• 2 eggs
• 2 cups of flour
• Silicone cookie baking molds

Here's how to make them:

Preheat your oven to 350 F. Mash two ripe bananas in a small bowl. (I like to do this with a fork so that the banana is still kind of chunky. Add the bananas to a large mixing bowl. Next, add the two eggs, one cup of canned pumpkin and two cups of flour to the large mixing bowl with the banana. Mix thoroughly until all ingredients are moistened. (You can use a wooden spoon, or a hand mixer).

Once the ingredients are combined, use a small spoon to fill your silicone cookie molds. When the tray is filled, use the flat side of a knife to "swipe" across the top of your cookie mold, removing all excess dough from your mold.

Bake in preheated oven for approximately 10 mins. You may need to adjust bake time slightly depending on the size of your cookie mold, but they should feel solid and slightly springy to the touch when they are completely cooked.

Cool the pupcake bites in the mold until you are able to bend the mold to dispense the tiny cakes. Once they are cool, be sure to taste your pupcake bites because the tasting is the most important step of all! (Also, you might need to taste more than one to be sure you got it right, if you know what I mean!)

That's all there is to it! However, since these pupcake bites have chunks of banana in them, be sure to store them in an airtight container in the refrigerator for up to seven days.
